I've tried many lemon chicken recipes and always finish saying to myself, its just not lemony enough. Problem solved!
A twist on Rao's chicken, I prefer the flavor of sherry vinegar and the addition of fresh rosemary. The most important element here is the use of fresh lemon juice, it makes a difference. Get yourself a nice crispy baguette to sop up the sauce....enjoy.
2 1/2-3# quartered chicken. (Remove wing tips)
Lemon Sauce- see below
1/4 cup chopped fresh italian parsley
1. Broil chicken halves turning once for about 30 minutes or until skin is brown and crispy.
2. Remove chicken from broiler, leaving broiler on. Cut each half into about 5 pieces. Leg, thigh, and 3 breast pieces.
3. Place chicken in a baking dish. Pour lemon sauce over the chicken and toss to coat.
4. Return to broiler for 3-4 minutes. Turn each piece and broil for one additional minute.
2 Cups fresh squeezed lemon juice
1 Cup extra virgin olive oil
1 Tbsp sherry wine vinegar
1 1/2 tsp minced fresh garlic
1 tsp fresh chopped rosemary
1/2 tsp dry oregano
salt & pepper to taste.
Wisk ingredient together. Keep refrigerated until ready to use.
