Those of you that have young kids and are tired of eating chicken fingers, mac & cheese, pasta with butter and grated cheese because thats the only thing that THEY will eat and you dont bother making something separate for yourself, try this. Its got a little kick with red pepper flakes for which Arrabbiata is dirived literally meaning "angry" in italian. This quick 15 minute pasta meal may be a perfect blend for everyone. Suggested wine pairing: Chianti or Valpolicella Ripasso
1 lb of pasta 4 strips of bacon ½ yellow onion, small diced 3 large cloves of garlic, minced 28oz diced tomato 1 ½ tsp red pepper flakes ½ cup fresh basil leaves, rough chopped kosher salt and pepper to taste
After cooking the bacon, reserve the fat to saute the onions and garlic. Place cooked bacon aside on paper towel.
As my sous chef Jake sweats the onions and garlic, Im getting a pot for the water to cook the pasta.
Add the can of diced tomatoes and fresh basil. Season with salt & pepper. Simmer for 10-15 minutes.
Chop bacon and add to the sauce.
Add cooked pasta to the sauce.
Chef tip: For the pasta water, salt well but do not add any oil. There is a misconception that you should add oil to boiling water to avoid the pasta from sticking. Not true. Actually most of the oil stays on the pasta as you drain it and prevents the pasta from absorbing the sauce.
